A Belated Mother's Day to all those mothers out there who are celebrating at a safe distance from the children they love. I celebrated by making myself a simple but very special dinner of scrambled eggs with just-gathered morels and just-picked asparagus. Yummy and safe, but no substitute in the long-term for real hugs.
The eggs, of course, were Omega-3 eggs which simply means that the chickens that laid these eggs were fed a diet that was rich in Omega-3s and had a good balance of Omega-3s and Omega-6s. Free-range chickens that forage for themselves naturally have an Omega-3 rich diet (think wild greens and insects) but those of us who do not have our own chickens have to make do with commercial eggs, whose layers have been fed a commercially-balanced diet, using flax, canola and sometimes fish meal. The best of these eggs have as many Omega-3s in them as a piece of salmon and are well worth their cost!
Just thought I'd remind everyone of this everyday and affordable source of Omega-3s on a Mother's Day that we'll never forget.
