Hello Everyone -- and I hope that your quarantining is going well.
I know that many people are making bread during these crazy times.
I've been trying to move so haven't had the time -- UNTIL I saw this absurdly easy and quick recipe for Beer Bread in the New York Times. It is as good, toasted, as any English Muffin I've ever had. I used an old bottle of the Jamaican Lager: Red Stripe but think any bland beer would work equally well.
And, of course, I replaced 1/2 cup of the flour with ground flax meal to boost the Omega-3s!
Ingredients:
Unsalted butter, for greasing the pan
cornmeal, for dusting the pan
3 cups all-purpose flour
3 tsp baking powder
1 tsp kosher salt
2 TBS sugar
1 (12 oz) can or bottle beer (the blander the better)
Instructions:
Mix four, baking powder, salt and sugar in a bowl and stir in the beer. Place batter in pan. Bake at 375 degrees for about 35 minutes, or until the top is browned and a tester comes out clean.
Allow to cool completely before slicing and toasting.
